We have been using the same culture to ferment our cream since the opening of the restaurant in 2014.

The cream is fermented for 7 days, churned, pressed, seasoned, wrapped in cloth and hung up to dry-age for a minimum of 10 months.

Creamy, complex, cheesy, delicious dry-aged butter.

Ingredients: Cultured cream, 1.9% salt
